Some things are worth doing slowly.
Born in Goa
Sukris began in Goa, from a curiosity about chocolate and a desire to understand the craft behind it.
There are plenty of chocolate bars in the world. We didn’t start Sukris to simply make another one. We wanted to create chocolate with a sense of place, made in Goa from Indian cocoa, that still meets the expectations of people who appreciate fine craft chocolate.
From cocoa bean to chocolate bar.
Every bar is made in Goa in small batches. There are no shortcuts here, just a process that takes the time it takes.
1Roast
Carefully selected South Indian cocoa arrives in Goa, where the beans are roasted.
2Crack & winnow
The roasted beans are cracked open and the husk is winnowed away.
3Stone grind
Slowly ground on stone for around 72 hours, developing texture and character.
4Temper
The chocolate is tempered so it sets with a clean finish.
5Mould
Poured into moulds and set into bars.
6Chocolate
Cocoa, cocoa butter and raw cane sugar. Cocoa stays at the centre.

The craft
The cocoa we work with is carefully selected and sourced from South India. The beans arrive in Goa and are roasted, cracked and winnowed, then ground on stone.
Stone grinding is slow. It can take around 72 hours. We think that patience shows up in the texture and in the character of the chocolate.
After grinding comes tempering, moulding, and finally a finished bar.
